Transforming the previous labyrinth of hallways into an open, ambient space, owners and power couple, Richard and Brenda Lucio, introduce the premiere southwestern hot-spot to the Fort Collins community. As of April 1, spice enthusiasts and margarita fanatics need look no further than below the Fort Collins Museum of Art. While an unlikely location, the originality of the idea is quite the opposite and one that only true entrepreneurs would notice. “I don’t know if it’s entrepreneurship or just nuts,” said Richard. However you look at it, the restaurant is far from nuts with its surprisingly lit space and splash of bronze and teal undertones. With big plans for the future, including an expansive patio space with fire-pit seating and a menu even the pickiest eater would be pleased with, the Blue Agave Grill is sure to make its mark as the go-to restaurant in Old Town in no time.
