Nestled in the most unsuspecting strip mall in southeast Fort Collins is William Oliver’s, a classy speakeasy serving the finest whiskey, scotch and bourbon. Opening in March after 10 years in the making, owners Tiffany and Ryan Wallace created a popular hangout for whiskey enthusiasts and those who would like to sample the 200 bottles from all over the world or have a killer cocktail. They offer half-ounce tasters, one and two ounce servings, as well as the wonderful Boylan’s soda and local beers on tap. In the distinctive surroundings of 100 year-old douglas fir bar top, the Publick House now offers classes to educate people about scotch and whiskey, taught by their knowledgable and friendly staff.
