The staff of Blind Pig along with the concept for the restaurant itself hails from the center of Americas earth, Texas! Located just west of East Coast, they open every day at 10a and close when the customers leave at last call. Some spectacular items on their menu to check out are the brisket quesadillas, and my personal favorite, their $3 bowl of “Green Mac n Cheese”, loaded with a variety of mouth-watering peppers. An important day for this new spot is May 2nd, where The Dusty Neil Band will be playing all night long, in hopes to raise funding for Sierras Race for the Cure.
